This fantastic coffee comes from Hacienda Lugmapata in Pallatanga, Chimborazo, Ecuador, a family farm known for micro-lot production using innovative varietals and processing techniques.

The farm has a history of success in competitions, including winning Ecuador's Cup of Excellence and consistently ranking high in both Cup of Excellence and Taza Dorada. Grown at elevations of 1,650 to 2,000 MASL, this Sidra varietal is processed using the washed anaerobic method.

Cherries are handpicked at peak ripeness, sorted by submerging them in water to remove floaters, and stored in the same manner as anaerobic naturals for 12 hours. After depulping, the seeds ferment anaerobically for 48 hours under water, slowing fermentation to develop unique flavors. The mucilage is washed off, and the coffee is dried on raised beds for 19-25 days.

The result is a coffee with vivid fruit and floral flavors, a characteristic of both the Sidra varietal and the washed anaerobic process. It is sweet, complex and balanced offering an unforgettable coffee profile. Enjoy this incomparable lot from Familia Merino!
